High up in the remote mountains of Chiang Rai Province sits the Doi Chang village coffee region, one of the very first Thai villages to successfully commercialize fine arabica coffee.  Best known for coffee grown by the Akha tribe, our Doi Chang is grown by the Lisu people, a Tibetan/Burmese ethnic group that has also settled in the area.  Up until about a generation ago, both the Lisu and Akha tribes grew illegal opium in these mountains.  Armed warlords ruled the area, many villagers became badly addicted to opium, and would often sell their children into slavery and prostitution.  Opium required clear-cutting as well, which denuded the hills of trees and native vegetation.  The introduction of arabica coffee solved this catastrophe by giving the local hill tribes a sustainable crop that thrives in consonance with the environment.

Our Doi Chang coffee is our most robust, full-bodied and complex offering.  We push the roast a little bit longer for this coffee, which unlocks its full potential and depth.  Many drinkers report a wide range of subtle and often elusive flavors and notes.  Perhaps most notable are hints of cedar, tobacco, and a slight fermented fruity flavor similar to apricot.  It has a very long finish, which includes a caramel/chocolate aftertaste that is common to many Thai arabicas.
